Receta Beef Or Chicken Stock

Ingredientes
- 2 1/4 lb Meaty beef bones or possibly chicken Bones
- 1/4 c. Margarine (beef stock only)
- 10 c. Cool water
- 2 x Coarsely minced celery Stalks
- 2 x Coarsely minced carrots
- 1 x Coarsely minced onion
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 pch Rubbed thyme
- 1 pch Dry oregano leaves
- 1 pch Rubbed sage

- In heavy Dutch oven, brown beef bones slowly in margarine over low heat, 30 min, stirring occasionally. Add in water & remaining ingredients; bring to simmer. Simmer, uncovered, 3-4 hrs, skim off grease or possibly scum which rises to top. Remove meat, bones & vegetables.
- Strain. Refrigeratestock & remove fat from surface. Let stand 24 hrs.
