Receta Blueberry Scones

Ingredientes
- 2 c. Atkins Bake Mix
- 2 tsp baking pwdr
- 1 Tbsp. grated lemon rind
- 1/2 tsp salt
- 2 pkt sugar substitute
- 2 c. blueberries
- 1 c. lowfat sour cream
- 2 x Large eggs
- 3 Tbsp. butter melted, cooled
Direcciones
- Heat oven to 350 degrees. In a mixing bowl, whisk bake mix, baking pwdr, zest, salt and sugar substitute; toss in blueberries to coat. In a separate bowl whisk lowfat sour cream, Large eggs and butter to combine. Mix dry ingredients with lowfat sour cream mix to combine.
- On an ungreased baking sheet, pat dough into an 8 circle. Cut into 8 wedges, but don't separate. Bake 55 min, till golden. Loosely cover with foil after 25 min to prevent overbrowning.
- This recipe yields 8 servings.
- Comments: These are great with herbal tea and English clotted cream, available at specialty food stores.
