Receta Blueberry Spice Cake

Ingredientes
- 1 pt Blueberries, washed, liquid removed
- 2 c. All-purpose flour
- 2 tsp Baking pwdr
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 1/2 tsp Grnd cloves
- 1/2 tsp Allspice
- 1/3 c. Butter or possibly margarine, softened
- 1 c. Granulated sugar
- 1 x Egg, at room temperature
- 3 Tbsp. Molasses
- 1 c. Buttermilk or possibly sour lowfat milk
- 1/3 c. Confectioner's sugar
Direcciones
- Preheat oven to 375 degrees. Toss berries with a little sugar to coat.
- Butter and flour a 13x9x2-inch pan.
- Sift flour to measure 2 c.. Resift with baking pwdr, baking soda, salt and spices. Cream butter and sugar. Beat egg till lemon-coloerd and add in to butter mix, beating well. Gradually beat in molasses.
- Alternately add in butter-egg mix and buttermilk, a little at a time, to dry ingredients. Beat well after each addition. Gently mix in blueberries.
- Pour into prepared pan. Bake for about 30 min, or possibly till toothpick inserted in middle comes out clean. Remove and cold cake in pan on rack.
- Dust with confectioner's sugar. Cut into squares.
- Yields 16 servings.
