Receta Cacik (Yogurt And Cucumber Sauce)

Ingredientes
- 1 lrg cucumber peeled, seeded, and grated Salt to taste
- 3 x garlic cloves mashed
- 2 c. thick high-quality full-fat plain yogurt
- 1 Tbsp. minced fresh dill
- 3/4 tsp dry mint
- 1 Tbsp. extra-virgin extra virgin olive oil
Direcciones
- Toss grated cucumber with a light sprinkling of salt. Leave for 30 min. Drain the cucumber, squeezing out all the liquid.
- Lb. the garlic in a mortar with 1 tsp. salt till completely mashed. Stir the garlic into the yogurt and beat with a fork till smooth. Stir in the cucumber, the dill, mint and extra virgin olive oil and stir till the consistency of a thick soup. Chill for an hour and serve cool.
