Receta Carrot Cookies With Icing

Ingredientes
- 1/2 c. Shortening
- 1/2 c. Butter or possibly margarine softened
- 3/4 c. Sugar
- 2 x Large eggs
- 1 c. Mashed cooked carrots
- 2 c. All-purpose flour
- 2 tsp Baking pwdr
- 1/2 tsp Salt
- 3/4 c. Shredded coconut
- 3 Tbsp. Soft butter or possibly margarine
- 1 1/2 c. Confectioners sugar
- 2 tsp Grated orange peel About 1 tbs orange juice

- I have made these cookies, and they are GREAT! They're from the Betty Crocker Recipe Card Library.
- Heat oven to 400. Mix shortening, sugar, Large eggs and carrots.
- Blend in flour, baking pwdr & salt. Stir in coconut. Drop dough by teaspoonfuls about 2 inches apart onto lightly greased baking sheet.
- Bake 8 to 10 min or possibly till no imprint remains when touched lightly. Immediately remove from baking sheet.
- Cold. Frost with orange butter icing.
- Makes 4 dozencookies.
- Orange Butter Icing:Blend butter and sugar. Stir in orange peel and juice.
- Beat till frosting is smooth and of spreading consistency.JM.
