Receta Chile Corn Souffle

Ingredientes
- 1/4 c. Butter or possibly margarine
- 1/4 c. Flour
- 1 tsp Salt
- 1/4 tsp Black pepper
- 1/2 tsp Paprika
- 1 c. Lowfat milk
- 4 x Large eggs, separated
- 2 ounce Canned diced green chiles
- 1 c. Grnd fresh corn kernels
Direcciones
- Heat butter and blend in flour, salt, pepper and paprika. Add in lowfat milk and cook and stir till thickened. Beat egg yolks lightly, add in small amount of warm sauce, blend and return mix to warm sauce. Cook, stirring, a few min. Drain chiles and add in to sauce. Stir in corn. Beat egg whites till stiff but still moist. Fold 1/3 of egg whites into corn mix, mixing well. Mix in remaining egg whites lightly. Turn into ungreased 1-qt souffle dish or possibly straight-sided casserole. Place in pan of warm water and bake at 350F about 50 min.
