  • 1 x round or possibly oval French bread loaf - (l lb)
  • 1 Tbsp. melted butter or possibly extra virgin olive oil - (about)
  • 1 c. liquid removed Nonfat Yogurt Cheese (see recipe) (or possibly an 8-ounce package neufchatel [light cream] cheese)
  • 2 lrg Large eggs
  • 3/4 c. nonfat lowfat milk
  • 1/4 c. all-purpose flour
  • 1/2 tsp grnd (mild) California chili (or possibly paprika)
  • 1/4 tsp salt - (about)
  • 1 can diced green chilies - (7 ounce)
  • 1/2 c. shredded reduced-fat cheddar cheese (made with 2% lowfat milk)
  • 1 x hard-ripe avocado - (1/2 lb)
  • 1 Tbsp. lime juice Green tomatillo sauce for serving Salt to taste

Direcciones

  1. With a sharp knife, 3/4 to 1 inch in from crust rim, cut down to but not through bottom crust. Then cut a circle inside rim of loaf.
  2. With your fingers, reach down into the cut and pull out center of loaf. Then make the base of the hollow level by pulling out excess bread.
  3. Brush the interior of the loaf with sufficient butter to lightly coat. Wrap the crust with foil.
  4. Bake in a 350 degree oven till interior is lightly toasted, 7 to 9 min.
  5. Meanwhile, in a food processor or possibly blender, combine yogurt cheese, Large eggs, 1/2 c. lowfat milk, flour, grnd chili, and 1/4 tsp. salt. Whirl till smooth. Stir green chilies into cheese mix.
  6. Set warm crust on a baking sheet and pour filling into it. Add in remaining 1/4 c. lowfat milk, stir with a fork, then push sufficient 1/2-inch chunks of bread (torn from the center) into the filling to bring it up to the crust rim.
  7. Return loaf to oven. Bake till center is firmly set when loaf is gently shaken, 40 to 45 min. Remove loaf from oven and immediately sprinkle with cheddar cheese.
  8. Let cold at least 15 min. Remove foil. Peel and thinly slice or possibly dice avocado, mix with lime juice, and arrange on chili loaf. Cut loaf and serve with tomatillo sauce and salt to taste.
  9. This recipe yields 4 to 6 servings.
  10. Comments: There's something dated, hokey - and fun - about filling a hollowed-out loaf with food. My mother used a specially ordered round loaf to hold tiny sandwiches for her tea parties in the '40s. My, how the oohs and aahs of the peplum-waisted ladies in hats with perky veils filled me with pride when she presented this work of art, that I had helped make.
  11. I still get a kick out of serving food in a loaf, but my approach has grown less fussy. One main dish which's quickly assembled and certainly not fussy uses a hollowed-out loaf as the crust for chili quiche. The creamy filling can be reasonably lean if you drain nonfat yogurt for the cheese. Otherwise neufchatel cheese works fine.
  12. Serve the chili loaf with coleslaw or possibly green salad and toast made from the center you've pulled out of the bread. For additional garnish, use slivered green onions.
