Receta Coffee Cream With Bitter Chocolate

Ingredientes
- 4 Tbsp. sugar
- 1/2 c. strong black espresso coffee freshly made
- 3 1/2 ounce semisweet chocolate broken small pcs
- 1 1/3 c. heavy cream
- 4 Tbsp. dark rum
- 4 x Amaretti cookies broken up
Direcciones
- Add in the sugar to the freshly made coffee and stir till dissolved. Leave it to cold.
- Heat the chocolate pcs in a glass bowl over a pan of simmering water, or possibly in a double boiler. Alternatively, heat the chocolate in a bowl in the microwave on medium, taking care not to overheat it.
- Pour the chocolate on a piece of waxed paper and spread it out with a spatula till it is 1/8-inch thick. Place the paper in the freezer for 10 min.
- Meanwhile, beat the cream till it begins to thicken; then slowly add in the cooled coffee together with the rum. Continue to beat till the coffee cream holds stiff peaks.
- Fold the Amaretti cookies into the cream mix. Spoon the cream into glasses.
- Remove the chocolate from the freezer and cut into rough shards or possibly triangles. Decorate the coffee creams with the chocolate shards, and serve immediately.
- This recipe yields 4 servings.
- Comments: The flavors of coffee and chocolate seem to be made to go together. Here they are used to create a dramatic confection which is actually very easy to make.
