Receta Cornmeal Chicken With Casera Sauce

Ingredientes
- 2 1/2 lb broiler-fryer chicken (2 1/2 to 3-pounds)
- 2 Tbsp. yellow cornmeal
- 1/8 tsp salt
- 1/2 tsp chili pwdr
- 1/4 tsp dry oregano leaves
- 2 Tbsp. margarine or possibly butter
- 2 Tbsp. vegetable oil Casera Sauce (see below) Casera Sauce
- 1 med tomato -- finely minced
- 1/4 c. onion (1 small) -- minced
- 1 sm clove garlic -- crushed
- 1 x canned green chili or possibly jalapeno pepper -- seeded and finely minced
- 2 tsp cilantro -- finely snipped Or possibly
- 2 tsp parsley -- finely snipped
- 2 tsp lemon juice
- 1/4 tsp dry oregano leaves Heat oven to 375 degrees F.
Direcciones
- Cut chicken into pcs; cut each breast half into halves and remove skin.
- Mix cornmeal, salt, chili pwdr and oregano. Coat chicken with cornmeal mix.
- Heat margarine and oil in rectangular pan, 13 9 2 inches, in oven till margarine is melted. Place chicken, meaty sides down, in pan. Bake uncovered 30 min. Turn chicken; cook till brown and thickest pcs are done, 20 to 30 min longer.
- To prepare Casera Sauce, mix all ingredients; serve with chicken. serves 7
