Receta Crunchy Chicken Salad
Ingredientes
- 2 large chicken breasts, cooked
- 1/4 C diced red bell pepper
- 1/4 C diced celery
- 1/2 small can water chestnuts (Save the rest in the brine and use it for something else.)
- 1/4 C pecan pieces
- 2 chopped hard boiled eggs
- 2 T diced red onion or scallions
- 1 T chopped fresh parsley
- 1/2 tsp. Dijon mustard
- mayonnaise to moisten (I use a half cup or more)
- juice 1/2 lemon
- salt and pepper to taste
- optional: chopped craisins, chopped apple
Direcciones
- Combo the ingredients in a bowl, cover and refrigerate several hours before serving.
