Receta Eggplant Croquettes

Ingredientes
- 2 x Eggplants, peeled & cubed
- 1 c. Bread crumbs, seasoned
- 2 Tbsp. Parsley, fresh, minced
- 1 x Clove garlic, chopped
- 1 tsp Salt
- 1 c. Sharp cheese, grated
- 2 x Large eggs
- 2 Tbsp. Onion
- 1 c. Corn oil
- 1/2 tsp Pepper
Direcciones
- In covered saucepan, cook eggplant in a small amount of boiling water till tender, about 4-5 mins. Drain & mash. Stir in remaining ingredients except oil. Shape into patties. Fry in warm oil till golden, about 5 mins on each side.
