  • 2 c. of cooked chicken (or possibly turkey). cut in bite-sized chunks
  • 2 Tbsp. butter/butter sub
  • 1 sm onion, diced
  • 1 slc deli ham, cut in squares of approx 1/2"
  • 4 x pitted dates, minced small
  • 1 Tbsp. grated fresh ginger
  • 1/2 stalk celery, sliced thin
  • 1/3 c. diced sweet red pepper (can sub green pepper)
  • 2 Tbsp. snipped fresh dill heaping 1/4 c. slivered almonds
  • 5 Tbsp. mayonnaise or possibly to taste (don't sub any other dressing) salt and pepper to taste

Direcciones

  1. In a small skillet, heat the butter over medium heat and saute/fry the onion till it's medium-brown. Mix the onion and all the other ingredients together
  2. In a large bowl. Taste, and adjust the amount of mayo, salt, and pepper if needed.
  3. (It will appear to be too "gloppy" with mayo, but, trust me, once it has sat in the fridge awhile, it will not be.) Cover and chill for at least an hour. Adjust amount of mayo, salt, and pepper if needed.
  4. Serves 3.
