Receta French Style Roast Beef

Ingredientes
- 3 lb boneless chuck or possibly rolled rump roast
- 6 whl cloves
- 1 x bay leaf
- 4 c. water
- 2 med onions, quartered
- 2 stalk celery, cut 1in pcs
- 5 x peppercorns
- 1 tsp salt
- 1 tsp thyme
- 1 lrg clove garlic
- 4 med carrots, quartered
Direcciones
- Place roast, salt, thyme, clove, peppercorns, bay leaf, and garlic in Dutch oven and add in water. Heat to boiling, reduce heat and simmer covered 2 1/2 hrs. Add in remaining ingredients, cover and simmer another 30 min. Remove roast, cut into 1/4in slices. Strain broth from 6vegetables and serve. Retain broth to spoon over beef.
