Receta Herb Crusted Beef Tenderloin

Ingredientes
- 2 lb centre-cut beef tenderloin, trimmed (1 kg)
- 1/4 c. extra virgin olive oil (60 mL)
- 2 tsp minced fresh rosemary (10 mL)
- 2 tsp minced fresh Italian parsley (10 mL)
- 2 tsp minced fresh thyme leaves (10 mL)
- 2 tsp chopped garlic (10 mL)
- 1 Tbsp. kosher salt (15 mL
- 1 Tbsp. freshly grnd black pepper (15 mL) Potato Flan, recipe follows
- 1 c. Red Onion Marmalade, recipe follows (250 mL)
Direcciones
- Preheat the oven to 400 degrees F (200 degrees C).
- Tie the beef with butcher's string and rub with the extra virgin olive oil.
- Combine the rosemary, parsley, thyme and garlic and pat the mix on the beef.
- Season the beef with salt and pepper.
- Over high heat sear the beef in a ovenproof skillet, turning to brown on all sides, about 5 min.
- Place the skillet directly into the oven and roast the beef for 20 to 25 min.
- Let the beef rest for 10 min before removing the string and slicing.
