  1. In a six-qt pot, sear meat in warm extra virgin olive oil, stirring constantly over high heat till grey, but not brown. Add in water and mix well. Add in bay leaves now, but remove and throw away after 15 min of cooking. Simmer covered 1 1/2 to 2 hrs, stirring occasionally. Add in remaining ingredients, except for flour and cornmeal. Cocoa should be added now. Simmer, stirring frequently, for 30 min. Skim off any excess fat. Adjust seasonings and add in flour and cornmeal blended with a little cool water to make a paste.
  2. Cook, stirring constantly to prevent sticking, till chili is the desired comsistency.
