Receta Lemon Ambrosia Cupcakes

Ingredientes
- 3/4 c. butter or possibly margarine -- softened
- 1 1/2 c. sugar
- 2 x Large eggs
- 2 tsp grated lemon peel
- 1 1/2 tsp vanilla
- 2 1/2 c. all-purpose flour
- 2 1/2 tsp baking pwdr
- 1 1/4 c. lowfat milk
- 1/2 c. coconut flakes
- 1/4 c. minced pecans
Direcciones
- Beat together butter and sugar till fluffy. Add in Large eggs, lemon peel, and vanilla. Beat till fluffy. Combine flour, baking pwdr, and 1 tsp. salt; add in to butter mix alternately with lowfat milk, beating after each addition. Fill paper bake c. in muffin pans half full with batter. Combine coconut and pecans; sprinkle atop cupcakes, pressing lightly into batter. Bake in 375 degrees F. oven for 15 to 20 min.
- Yield: about 2 1/2 dozencupcakes (1 per serving).
