  • 12 medium-sized prawns, boiled, peeled and cut into chunks
  • 4 big ripe mangoes, halved lengthwise
  • 1 sweet red bell pepper, grilled, peeled, seeded, and cut into strips
  • fresh min leaves for garnishing
  • Dressing:
  • 1/2 cup mayonnaise
  • 1 250 ml all-purpose cream
  • 1 tbsp calamansi juice
  • 1 tsp mustard
  • 1 tsp sugar
  • salt and pepper to taste

Direcciones

  1. Prepare prawns as directed.
  2. Scoop flesh of mangoes in cubes with spoon leaving a thin layer of flesh near skin to keep skin rigid.
  3. Combine dressing ingredients, toss in prawns and mango gently just enough to coat with dressing without masking ingredients completely.
  4. Fill mango skins with mixture.
  5. Garnish with pepper strips and mint leaves. Serve chilled.
