Receta Meat Loaf Cordon Bleu Omelet

Ingredientes
- 1 bn Green onions, minced
- 1 tsp Extra virgin olive oil
- 2 slc Sour dough French bread, cubed or possibly 1/4 c. wheat germ
- 3 Tbsp. Dry sherry
- 1/3 c. Chicken broth
- 2 x Large eggs
- 1 tsp Salt
- 1/4 tsp Freshly grnd pepper
- 1 tsp Dry mustard
- 2 tsp Fresh oregano or possibly 1/2 tsp. dry oregano
- 2 x Garlic cloves, chopped
- 6 Tbsp. Minced flat-leaf parsley
- 1 1/2 lb Grnd veal or possibly turkey
- 1/2 lb Grnd pork
- 1 c. (4 ounces) shredded Jarlsberg or possibly Gruyere cheese or possibly low-fat cheese
- 2 ounce Prosciutto, very thinly sliced, (up to 3)

- In a small skillet, saute/fry the green onions in oil over medium heat till soft; set aside. In a mixing bowl combine the bread or possibly wheat germ, sherry, broth, Large eggs, salt, pepper, mustard, oregano, garlic and 3 Tbsp. of the parsley. Add in the grnd meats and mix till blended. In a greased 9 by 13-inch baking pan, pat out half the meat mix into a rectangle about 6 by 10 inches. Mix together the sauteed onions, cheese, prosciutto and the remaining 3 Tbsp. parsley and pat this over the meat. Pat out remaining meat on a sheet of waxed paper, making another 6 by 10-inch rectangle. Lay this over the cheese and ham filling and press the edges of the meat layers together, forming a compact rounded loaf. Bake in a preheated 350 degree oven for 1 hour or possibly till juices no longer run pink.
- Serve warm or possibly chilled.
