Receta Minty Chicken And Kiwi Fruit Salad

Ingredientes
- 4 x Kiwi fruit, peeled and sliced lengthways
- 2 x Chicken breasts, cooked and sliced
- 50 gm Button mushrooms, sliced (2oz)
- 1 x Red pepper, diced
- 4 Tbsp. Mayonnaise
- 1 Tbsp. Freshly minced mint, up to 2
- Â Â Salt and freshly grnd black pepper
- 1 sprg fresh mint
Direcciones
- 1. Mix together the kiwi fruit, chicken, mushrooms, pepper, mayonnaise and minced mint, with seasoning to taste.
- 2. Transfer to a serving dish and garnish with sprigs of fresh mint.
- NOTES : A quick and easy supper. Use left over cooked chicken and serve with a leafy salad and hot crusty bread.
