Receta Mocha Pastry Cream Filling

Ingredientes
- 2 ounce Chocolate, (squares, melted, or possibly envelopes)
- 1 c. Cream
- 1 c. Extra-strong coffee
- 5 x Egg yolks
- 3/4 c. Sugar
- 1 pch Salt
- 2 tsp Cornstarch
- 2 Tbsp. Lowfat milk
- 1 tsp Rum
Direcciones
- 1. Blend the chocolate, cream and coffee.
- 2. Beat the egg yolks till light, add in the sugar slowly, then the salt.
- Beat this till it is thick and creamy. Add in the chocolate mix and blend.
- 3. Mix the cornstarch and lowfat milk and stir into the custard mix. Turn the whole into the top of a double boiler and cook over simmering water till thick and smooth. Cold. Add in the rum.
- Makes about 3 c.. This will cover 2 layers of a 3-layer cake or possibly 8 large cream puffs.
