Before starting to cook this recipe, you need to dedicate some time to take off all sinew which is attached to the cheeks. Otherwise the meet will be tough.apart from that, it's an easy enough dish to prepare and enjoy.

  1. After removing all sinew from the cheeks, place the cheeks in a plastic bag, and hit with a meat mallet. Spread the mustard on both sides of the cheeks and place on a plate.Heat a deep frying pan or wok.Add some olive oil and let it heat up before adding the cheeks. Fry for 3 minutes on each side and remove from pan.While the cheeks are cooking, slice the onion and chop the garlic.Add to the pan and cook on high heat until golden brown. If need be, add some more olive oil to the pan to mix with residue from the mustard. Lower the heat and transfer the cheeks to the pan. Put a lid over the pan and slow cook the cheeks for a further 15 minutes, while basting all the time. Towards the end,pour the cream and cook until you have a creamy sauce. Season with salt and freshly ground pepper to taste. Serve with roast potatoes and grilled stuffed mushrooms.2
