Receta New England Lobster Bisque

Ingredientes
- 2 med lobsters cooked
- 2Â 1/2 c. chicken consomme
- 1 x onion sliced
- 3 x celery stalks with leaves
- 1 x bay leaf
- 2 whl cloves
- 8 x peppercorns
- 1/4 c. butter
- 1/4 c. flour
- 3 c. lowfat milk
- 1 c. cream warm
- 1 Tbsp. dry sherry if you like
Direcciones
- Remove lobster meat and dice. Crush the shells and add in them with then ends of the claws to the chicken consomme, onion, celery, bay leaf, cloves, and peppercorns. Simmer for 1/2 hour, then strain.
- Heat butter, blend in flour, and add in the lowfat milk gradually. When smooth and bubbling, add in the lobster and stock and simmer, covered, about 5 min. Stir in the cream and sherry.
- This recipe yields 6 servings.
