  1. With your hands, force joints of each turkey wing open till they snap; then cut wings apart at joints. Throw away wingtips. Rinse remaining wing pcs and pat dry.
  2. In a wide, shallow rimmed plate, mix cornmeal, paprika, marjoram, and pepper. In a shallow pan, beat egg and water to blend.
  3. Dip wing pcs in egg mix to coat; then dip in cornmeal mix to coat well (pat coating on lightly for an extra-thick crust). Arrange pcs, slightly apart, in a single layer in an oiled shallow 10- by 15-inch baking pan.
  4. Bake, uncovered, in a 400 degree oven for 15 min; drizzle proportionately with butter. Continue to bake, uncovered, till meat near bone in thickest part of wings is no longer pink; cut to test (about 25 more min). Season to taste with salt.
  5. This recipe serves 6.

    I altered this recipe a bit by adding a few drops of liquid smoke to the wings before adding the dry seasonings. I also substituted seasoned breadcrumbs and flour instead of cornmeal. To the dry ingredients, I added smoked paprika, curry powder, chili powder, garlic powder, sage, allspice, seasoned salt, and dry marjoram leaves. I also used these ingredients, minus marjoram, to season the turkey wings. I used 3 eggs instead of 2. I placed the wings on a rack atop an uncovered cookie sheet. I baked the turkey wings for 400 degrees for 15 minutes then pored 1 cup.of melted butter on top of the wings, reduced temperature to 380, and baked for 2 hours 15 minutes. The result was a crispy skinned turkey wing layered with flavor. I took the picture shown on the site.
