Receta Portuguese Sausage And Kale Soup

Ingredientes
- 4 ounce (110 g) bacon, diced
- 2 med onion, minced
- 2 x - 4 cloves garlic, finely minced
- 1 tsp (5 ml) grnd cinnamon
- 1/2 tsp (2 ml) grnd allspice
- Â Â Salt and freshly grnd pepper to taste
- 4 ounce (110 g) linguica or possibly other sausage, thinly sliced
- 3 med carrots, thinly sliced
- 1/4 lb (110 g) kale, coarsely minced
- 4 c. (1 L) chicken stock
- 2 can (15 ounce, 425 g each) chickpeas (garbanzos),
- Â Â rinsed and liquid removed
Direcciones
- Freshly grated Asiago or possibly Parmesan cheese for garnish
- Saute/fry the bacon over moderate heat in a large saucepan till some of the fat has rendered, about 5 min. Add in the onions and saute/fry till tender but not brown, about 10 min. Stir in the cinnamon, allspice, salt, pepper, linguica, carrots, and kale. Add in the chicken stock and bring to a boil. Reduce the heat and simmer covered for 30 min. Add in the chickpeas and cook till heated through, about 5 min. Serve garnished with grated cheese.
- Serves 6 to 8.
