Receta Prune Cake (Holiday Spice Cake)

Ingredientes
- 1 c. Oil
- 1Â 1/2 c. Sugar
- 1 c. Buttermilk
- 2 c. All-purpose flour
- 3 x Large eggs
- 2 tsp Baking pwdr
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Baking soda
- 1/2 tsp Allspice
- 2 tsp Vanilla extract
- 1 tsp Lemon extract
- 1 c. Pitted prunes, minced
- 1 c. Pecans or possibly walnuts, minced
- Â Â Sauce
- 1 c. Sugar
- 1/2 c. Buttermilk
- 2 Tbsp. Light corn syrup
- 1 stk of butter or possibly margarine
- Â Â Cut into pcs
- 1/2 tsp Baking soda
- 1 tsp Vanilla extract
- 1 tsp Lemon extract

- Preheat oven to 350 degrees. Mix all ingredients (except sauce). Pour into a greased floured tube pan and bake till cake tests done - about 1 hour.
- Let cold in pan about 10 min; turn out on rack and cold completely.
- Poke holes through cooled cake with skewer and pour half of sauce over top
- (sauce recipe makes sufficient for two cakes). Wrap tightly and let sit for three days. (SAUCE - MAKES Sufficient FOR TWO CAKES) Combine all ingredients in a large sauce pan. Bring to a boil and boil till mix will spin a thread when poured off the end of a spoon - about 10 min. Cold slightly and pour sauce over cakes.
