Receta Spicy Black Bean Soup

Ingredientes
- 1 med Onion, minced
- 4 lrg Garlic cloves, chopped
- 1/2 c. Red wine, stock, or possibly water
- 28 ounce Can crushed tomatoes
- 4 c. Water or possibly stock
- 1 x Green bell pepper, diced
- 2 stalk celery, diced
- 2 c. Sliced okra
- 2 tsp Finely chopped fresh ginger
- Â Â (do not omit ginger)
- 1 tsp Each dry oregano, dry
- Â Â Thyme, paprika, and grnd
- Â Â Cumin
- 1/4 tsp Each black pepper and
- Â Â Cayenne pepper
- 1 c. Diced zucchini
- 15 ounce Can black beans, with liquid
- 1 x To 2 Tbsp. soy sauce
- 4 c. Cooked brown rice
- 2 x Smoked sausages
- 1 x (opt) Habanero pepper
Direcciones
- Braise the onion and garlic in wine till onion is soft. Add in tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 min.
- Add in the diced zucchini and the black beans with their liquid, cover and cook till the zucchini is just tender, about 10 min. Add in soy sauce to taste.
- Serve over cooked brown rice.
