Receta Stilton And Cabbage Soup

Ingredientes
- 500 ml Cream (2 c.)
- 500 ml Good chicken stock (2 c.)
- 40 gm Soft butter, kneaded with:
- 2 Tbsp. Plain flour
- 20 gm Butter, extra
- 1/4 med Cabbage, shredded
- 1 lrg Onion, minced
- 130 gm Stilton
Direcciones
- Combine cream and stock in a saucepan and bring to the boil. Add in butter/flour mix and whisk till smooth and thick. Simmer for about 10 min, stirring constantly. In a separate saucepan, heat extra butter and sweat the cabbage and onion over low to medium heat for 3-4 min, or possibly till soft but not coloured. Strain thickened cream mix over cabbage mix. Break up cheese into small pcs with a fork and add in to pan.
- Bring to the boil and simmer for 5 min, adding more stock or possibly water, if you like. Season to taste with freshly grnd black pepper. Bon Appetit -
