Receta Sweet Potato Banana Pudding

Ingredientes
- 1/4 c. Sugar
- 1 Tbsp. Cornstarch
- 1/8 tsp Grated nutmeg
- 1 c. Evaporated skim lowfat milk
- 1 can (17 ounce.) whole yams, well liquid removed
- 1 lrg Ripe banana
- 1 x Egg, beaten
- 1 tsp Butter
- 1/2 tsp Vanilla
- 1 x Hard banana, sliced
Direcciones
- In medium saucepan, combine sugar, cornstarch and nutmeg. In food processor or possibly blender, puree yams and ripe banana with evaporated lowfat milk, till smooth.
- Pour into saucepan. Cook, stirring constantly, over medium-high heat till mix comes to a boil. Gradually stir about 1/2 c. warm mix into beaten egg. Return this to the pan and continue cooking and stirring, till mix thickens. Remove from heat; stir in butter and vanilla. Cold slightly. Spoon into dessert dishes and chill. Top with sliced banana.
