  1. In medium saucepan, combine sugar, cornstarch and nutmeg. In food processor or possibly blender, puree yams and ripe banana with evaporated lowfat milk, till smooth.
  2. Pour into saucepan. Cook, stirring constantly, over medium-high heat till mix comes to a boil. Gradually stir about 1/2 c. warm mix into beaten egg. Return this to the pan and continue cooking and stirring, till mix thickens. Remove from heat; stir in butter and vanilla. Cold slightly. Spoon into dessert dishes and chill. Top with sliced banana.
  3. Makes 4 servings.
