Receta Dark Cherry Compote and Crumble Mulled Wine Ice Cream
This is not such an easy recipe recipe, but if followed precisely a successful outcome should be achieved. If you enjoy cherries, you will love this delicious dessert.
Ingredientes
- Mulled Wine Cherries ---
- 1.5L red wine
- 150g brown sugar
- 2g (1/2) cinnamon stick
- 2g cloves
- 1g (40pc) black pepper corns
- 1pc orange cut in quarters
- 50g sliced fresh ginger
- Mulled Wine Sauce ---
- 70ml mulled wine
- 35gr brown sugar
- Mulled Wine Ice Cream ---
- 700g milk
- 300g 35% cream
- 240g egg yolk
- 240g sugar
- 500g mulled wine
- 1 stick vanilla bean
- Crumble ---
- 1020g butter
- 681g sugar
- 360g corn starch
- 36g baking powder
- 1440g soft flour
- 0.3g per piece
- Vanilla Marscarpone Cream ---
- [ 200g milk
- 50g 35% cream
- 1/2 stick vanillaï¼
- 50g egg yolk ] >> use 250g of this ã
- 50g sugar
- 12.5g corn starch
- 12.5g soft flour
- 250g mascarpone
- 250g 35% cream
- 40g sugar
Direcciones
- ---- Mulled Wine Cherries ---
- Boil wine and burn
- Once fire is out add all ingredients, simmer and reduce to 750ml
- Cool down
- In a vacuum pack add the pitted cherries, add 450ml per 60 cherries
- Seal and steam at 100% for 8 minutes then shock.
- --- Mulled Wine Sauce ---
- Boil all and reduce to honey consistency.
- --- Mulled Wine Ice Cream ---
- Boil milk and cream with scraped vanilla bean.
- Mix egg yolks and sugar and mulled wine.
- Add the milk and cream to the egg yolks while stirring then place back on a slow heat stirring constantly until the mix coats the back of a spoon.
- Strain through a medium fine strainer and cool.
- Place in an ice cream maker.
- --- Crumble ---
- Rub all together.
- Make balls of 0.3g each.
- Bake on baking sheet in 180c oven until golden brown.
- Cool and place in air tight container.
- --- Vanilla Marscarpone Cream ---ã
- Bring the milk and cream to boil.
- Mix the yolks with the sugar then add the flours and mix well.
- Add the milk/cream to the egg mix and mix well.
- Return to heat, simmer for 3 minutes while mixing well.
- Remove from heat and place in a container, place plastic directly on skin and cool down.
- Once cool fold in the mascarpone and the sugar whipped cream.
- --- Presentation ---
- Place a dollop of the cream in the middle of the plate.
- Arrange the cherries on the cream then the crumbles, so that you can't see the cream.
- Place a quenelle of the ice cream on the pile.
- Squiggle some of the mulled wine honey on top.
