Receta Duck Carpaccio And Upside Down Apple And Polenta Cake With Ice Cream

Ingredientes
- 50 ml minced shallots
- 50 ml apple cider vinegar
- 100 ml extra virgin olive oil
- 15 ml minced chives
- 15 ml minced fennel
- 1 x salt and pepper For the Garnish

- 1 x fennel in thin julienne For the Salad fresh baby salad and greens

- 4 lb duck
- 100 ml maple brandy
- 300 ml maple syrup
- 1 x salt and pepper
- 1 x onion minced in 2
- 50 ml maple syrup
- 100 ml duck stock For the Confit Leg
- 500 ml duck fat Legs of the duck For the Sauce
- 175 ml duck fat or possibly 175 ml butter
- 250 gm sugar
- 3 x Large eggs
- 6 x egg yolks
- 150 gm flour
- 125 gm cornmeal
- 1 tsp baking pwdr For the Ice Cream
- 666 ml cream
- 333 ml lowfat milk
- 350 gm sugar
- 100 gm nuts
- 100 ml water
- 100 ml maple brandy To Assemble the Cake
- 4 x apples, peeled and minced in 12 parts
- 100 gm sugar
- 100 gm butter
Direcciones
- For the Garnish:Mix the garnish with a bit of the vinaigrette. Put the remaining vinaigrette on the duck. For plating, put the duck slices on a plate, add in a bit of the garnish and a slice of cool foie gras pate.
- For the Salad:Mix all the ingredients together, and add in to the fresh baby salad and greens.
- To Prepare the Duck:Flambe the duck with the brandy.
- Add in a bit of maple syrup and put the duck in a 375 F oven for 1 hour.
- Put a little but more of maple syrup every 10 min till golden.
- Roast the onion with a bit of butter and the maple syrup, add in the duck stock and put in a 375 F oven for 15 min.
- For the Confit Leg:Put the legs in the fat at 200 F for about 3 hrs.
- For the Sauce:Cream the fat with the sugar, adding the Large eggs and egg yolks one at a time. Add in the dry ingredients to the batter.
- For the Ice Cream:Bring cream, lowfat milk and 150 grams of sugar to a boil and let cold.
- Make a caramel with the remaining sugar and water, adding the nuts and flambe with the maple brandy and let cold.
- Put the ice cream prep and the caramelized nuts in an ice cream machine.
- To Assemble the Cake:Caramelize the apple with the butter and sugar.
- Put 4 pcs of apple in 8 centimeter diameter ring molds.
- Add in the cake mix and cook in a 375 F oven for 20 min. Invert the cake on a plate and serve with the ice cream.
