  • 1 pkt corn muffin mix - (8 1/2 ounce)
  • 1/2 c. lowfat sour cream
  •     (or possibly sour half-and-half)
  • 2 x Large eggs slightly beaten
  • 2 Tbsp. maple syrup

  1. Cook sausages according to package directions, drain on paper towels and cut into small pcs.
  2. Combine corn muffin mix, lowfat sour cream, Large eggs and maple syrup, stirring till just moistened. Carefully stir in sausages. Don't overmix. Allow batter to rest in bowl for 3 to 4 min before spooning into 12 greased or possibly paper lined muffin c..
  3. Bake at 400 for 15 min.
