Receta Sweet Potato And Molasses Muffins

Ingredientes
- 1 lrg orange-flesh sweet potato (about 1 1/4 pounds), baked till tender,peeled
- 2 x Large eggs beaten to blend
- 1/2 c. lowfat milk
- 1/2 c. unsulfured (light) molasses
- 3 Tbsp. butter melted
- 1Â 1/4 c. all purpose flour
- 1/2 c. whole wheat flour
- 2 tsp baking pwdr
- 1 tsp grnd cinnamon
- 3/4 tsp salt
- 1/2 tsp grnd ginger
Direcciones
- Preheat oven to 400F. Line 12 large muffin c. with foil muffin papers.
- Puree potato in processor. Measure 1 c. puree and transfer to bowl. Mix
- in Large eggs, then lowfat milk, molasses and butter. Add in all other ingredients and stir till just mixed. Divide batter among muffin c.. Bake till springy to touch and tester inserted into center comes out with just a few
- moist crumbs, about 25 min. Transfer to rack. Serve hot or possibly at room temperature.
