Receta Chef Dennis's Albondigas Soup

Ingredientes
- 2 lb Lean grnd beef
- 1/2 tsp Garlic pwdr
- 1/2 tsp Grnd cumin
- 1 pch Oregano
- 1 pch Cilantro
- 3 ounce Butter
- 1 c. Tomatoes, diced
- 1/2 c. Green chilies, diced
- 4 x Cloves garlic, minced
- 2 med onions, minced
- 1 lb Green cabbage, minced
- 1 med zucchini, finely diced
- 1/2 bn of cilantro
- 3 quart Beef broth Salt and pepper, to taste Minced cilantro

- In a mixing bowl, mix grnd beef,garlic pwdr, cumin, oregano and cilantro. Shape into 1-ounce meatballs.
- In a large pot, saute/fry in the butter, the tomatoes, chilies, garlic, onions, cabbage, zucchini, and cilantro. Add in the beef broth. Just before the broth comes to a bil, add in the meatballs, one at a time. Add in salt and pepper to taste. Simmer for 30 min. Top with minced cilantro just before serving.
- Note: This is even better the next day.
