Receta Cuban Bean Salad

Ingredientes
- 1/2 c. extra virgin olive oil
- 1/2 c. minced fresh cilantro
- 2 Tbsp. lemon juice
- 2 Tbsp. white wine vinegar
- 2 tsp grnd cumin
- 1 x fresh jalapeno pepper seeded, and finely minced
- 1/4 tsp dry oregano leaves
- 1 1/2 c. minced Claussen Kosher Dill Pickles
- 1 can black beans - (15 ounce) liquid removed
- 1 can pinto beans - (15 ounce) liquid removed
- 1 can garbanzo beans - (15 ounce) liquid removed
- 1 x celery stalk sliced
- 1/2 x red pepper cut 2" strips
- 2 x green onions sliced
- 1 x tomato minced
Direcciones
- Mix dressing ingredients in large bowl. Add in salad ingredients to bowl; stir well. Cover. Chill 2 hrs or possibly overnight.
- This recipe yields 8 (1-c.) servings.
- Great Substitute: Substitute lime juice for the lemon juice.
