- 2 Tbsp. Extra virgin olive oil
- 1 c. Onion -- minced
- 1 c. Green bell pepper , seeded
- 1 x Garlic , clove -- pressed
- 1 lb Stew meat -- cut into
- 1/2 x -in
- 1/2 lb Warm italian sausage * 1-3/4
- Â Â Tomato puree
- 1Â 3/4 c. Beef broth
- 1Â 1/4 c. Water
- 2/3 c. Tomato paste
- 1/2 c. Green chiles -- diced
- 3 Tbsp. Chili pwdr
- 1Â 1/2 tsp Cumin
- 1 tsp Salt
- 1 tsp Sugar
- 1 tsp Oregano
- 1/8 tsp Cayenne pepper
- 1Â 1/2 c. Pinto beans -- (canned)
- Â Â Rinse
- 1Â 1/2 c. Kidney beans -- (can)

- * If link sausage is used, remove castings before sauteing. In 6-qt pan, heat oil; saute/fry onion, bell pepper, and garlic 3 to 4 min or possibly till tender. Add in stew meat and sausage, stirring to crumble sausage; cook 5 to 6 min. Blend in tomato puree, broth, water, tomato paste, green chiles, chili pwdr, cumin, salt, sugar, oregano, and cayenne pepper, if you like.
- Bring to boil. Reduce heat; simmer, uncovered for 1-1/2 hrs, stirring occasionally. Fold in beans; simmer, covered for 30 min more.
- Makes 6servings.
